Cilantro is low in fat and has about an even amount of protein and carbs. A 4-ounce serving contains 4 grams of carbs, 2 grams of protein, 1 gram of fat and 26 calories. The protein content in cilantro is high in comparison to other herbs and vegetables. The recommended daily intake of carbs is 130 grams for the average adult. Men however, should get 56 grams of protein, while women need at least 46 grams. Fat should be kept to 25 to 35 percent of total daily calories. Based on 2,000-calorie diet, this would be 50 to 70 grams.

  • It’s great to learn that cilantro can help stimulate the secretion of insulin. My son is preparing to live his life with his new diagnosis of diabetes and he was wondering what foods he could eat that would stimulate insulin. I’ll let him know that he should start eating more foods with cilantro.
